In the 1950s and 60s, the issue of Salmonella contamination in meat emerged with the intensification of chicken rearing. It was clear that as chickens grow older, they become more resilient to Salmonella gut colonization. The role of the gut microbiota was soon identified as a key element in helping control Salmonella contamination.
